Five Star Apple, Cranberry and Macadamia Stuffing for Chicken or Turkey
125g Western Star Original Butter
2 onions, finely chopped
100g sliced pancetta, chopped
2 sticks celery, finely chopped
2 Granny Smith apples, finely chopped
1/3 cup finely chopped parsley
2 tblsp finely chopped sage
1 tspn thyme leaves
4 cups fresh breadcrumbs
1 cup dried cranberries
1/2 cup roasted macadamias, roughly chopped
Western Star Salted Butter
Melt the butter in a large frypan over medium heat. Add the onion, pancetta, celery and apples and cook for 10 minutes, until tender.
Add the herbs and cook for 1 minute, then add the breadcrumbs, cranberries and nuts and stir until combined.
Remove from heat, transfer to a bowl and cool for
30 minutes before stuffing turkey or chicken for cooking. If not stuffing and cooking immediately, then refrigerate until required.
