Mini Cheese and Roasted Vegetable Quiches
1 red capsicum, diced
1 small carrot, peeled and diced
1 zucchini, diced
150g sweet potato, peeled and diced
2 tblsp olive oil
salt and pepper to taste
2 eggs, lightly beaten
200ml Anchor Cooking Cream
1 tblsp fresh chives, finely chopped
200g Mainland Tasty Shredded Cheese
3 sheets frozen short crust pastry

Place vegetables in a baking dish, drizzle with oil and season to taste. Bake at 200°C for 25 minutes or until tender. Cool.
Combine eggs, Anchor Cooking Cream, chives and Mainland Tasty Shredded Cheese. Cut 18 pastry circles using 6.54cm wide pastry cutters and press into lightly buttered patty tins.
Place 1 tblsp vegetable mixture into each pastry case and pour over egg mixture. Bake in a moderate oven 180°C for 20-30 minutes until set and golden brown. Serve hot or cold.
