Pasta Carbonara
400g linguine
2 eggs, lightly beaten
200ml Anchor Cooking cream
3 tblsp chopped flat leaf parsley
150g Perfect Italiano Shredded Mozzarella
75g Perfect Italiano Parmesan Cheese
40g Western Star Butter
4 cloves garlic, crushed
6 slices prosciutto, roughly chopped
freshly ground pepper, to taste
Perfect Italiano Parmesan, freshly grated

Cook linguine in boiling water until al dente, drain. Combine egg, Anchor Cooking Cream, parsley, Perfect Italiano Shredded Mozzarella and Perfect Italiano Parmesan.
Melt butter in a frypan and sauté garlic and prosciutto for 1-2 minutes. Add hot pasta and egg mixture. Stir until cheese melts and sauce becomes thick and creamy. Serve hot pasta seasoned with freshly ground pepper.
